Toasted Orzo Chicken Soup


I have had a sick boy home with me for most of this week.  He is doing much better today thank goodness.  This soup was a good part of his diet over the past few days.  He really liked it and so did I but you really don't have to wait until your sick to try it.  LOL.

Cowboy Chili and Baked Bean Pot



Bacon, baked beans, fired-roasted tomatoes....the list of yumminess goes on and on.  Rachael Ray's Week In A Day show has won me over again.  This is some really good chili.  I used Bush's Steakhouse Recipe baked bean.  It tastes just like something I love to eat while hanging out by the campfire on cool but lovely winter/spring nights. Enjoy.

Coconut Biscuits

 This is a rare post because I was not 100% in love with these biscuits.  I liked them but I didn't LOVE them.  I normally only post things that I love but my husband really LOVED them.  I mean he really couldn't stay out of them.   He said they tasted like eggnog in a cookie.  In fact, he said next time I make them (apparently there will be a next time....who knew?) he would recommended I replace the 5Tbsp of water with rum.   Hmmmm...that sounds delicious even to me.  Bottom line: if you love eggnog these are the cookies for you.  (** I forgot to toast coconut and am not sure if that added to the eggnog flavor)  Enjoy!

Peanut Butter, Pretzel, Chocolate Balls

Sometimes a person just needs a good candy bar.  I had one of those weeks this week.  I wanted to eat pizza, candy bars, chicken fried chicken....I could go on and on.  After two years of no dairy, one would think I would be over it but every now and then it just hits me.  I think it all started when I attended a Skate City birthday party.  The pizza smelt soooo yummy.  Don't worry...I remember how awful pizza tasted at those type of places but it did smell good.  Thankfully, I found this recipe in an old Martha Stewart magazine.  They were fast and easy to make and I am not ashamed to admit I might have eaten 80 % of them all by myself.   They just hit the spot.  Yum!

Spinach and Sausage Stuffed Peppers

I am kinda hooked on Rachael Ray's new A Week In A Day show.  This recipe is not from the show but I love the idea of cooking for a couple of hours on Sunday and not having for worry about dinner for the rest of the week.  Sadly, I don't do it often but I think about it all the time.  This pepper dish is one that I did make on Sunday and had it for lunch all week.  As with any great red sauce, it just got better and better.  I really need to do this more often.  Enjoy!

Cabernet Burgers


It has been a while since I posted.  I have no idea why because I have been cooking and photographing.  So needless to say, I have quite a stash for future posts but today I post my favorite.  We had this dish for my birthday dinner last night.  I LOVE these burgers!  The combination of wine, bacon, rosemary, garlic, fresh tomato, ect,ect is just heaven to the taste buds!  Yum.  Try them you will not be sorry.
