Mango Sorbet

This is my favorite summer dessert!  My sweet mom bought me the Cuisinart ICE-21 Frozen Yogurt-Ice Cream & Sorbet Maker which is nicely priced and the best thing ever!!  I love this machine! It is so easy to use and works like a dream.  We are addicted to this mango sorbet.  I have no need for expensive coconut-based ice cream anymore because this is just a thousand times better!!
 Mango Sorbet


2 large mangoes
2/3 cup sugar
2/3 cup water
4 tsp lime juice
1 Tbsp dark rum
Pinch salt

Peel mangoes and cut the flesh away from the pit. Cut the flesh into chunks and put them in a blender with sugar, water, lime juice, rum and salt. Puree mixture until smooth. Taste, then add more line juice or rum if needed. Chill mixture thoroughly, then freeze in ice cream maker according to directions.
