Sometimes a person just needs a good candy bar. I had one of those weeks this week. I wanted to eat pizza, candy bars, chicken fried chicken....I could go on and on. After two years of no dairy, one would think I would be over it but every now and then it just hits me. I think it all started when I attended a Skate City birthday party. The pizza smelt soooo yummy. Don't worry...I remember how awful pizza tasted at those type of places but it did smell good. Thankfully, I found this recipe in an old Martha Stewart magazine. They were fast and easy to make and I am not ashamed to admit I might have eaten 80 % of them all by myself. They just hit the spot. Yum!
Peanut Butter, Pretzel, Chocolate Balls
Martha Stewart Magazine
1/2 cup creamy peanut butter
1/4 cup plus 1 Tbsp confectioners' sugar
1 Tbsp room-temperature unsalted butter, dairy-free
1 cup crushed pretzels
5 oz chocolate chips (Enjoy Life chips my fav)
Stir together 1/2 cup peanut butter, 1/4 cup plus 1 Tbsp confectioners' sugar, and 1 tsp butter. Stir in the crushed pretzels. Form into 1-inch balls. Freeze for 30 minutes or so. Dip in melted chocolate. (Melt in microwave for 60 sec. Stir. Then heat at 30 second intervals until melted completely) Refrigerate until set.
