Fig Truffles

January 2nd and my Christmas tree keeps giving me the eye.  It needs to be tucked away for the year but I guess I am just not ready.  Lazy maybe or maybe I just like having it around.  Normally by this time of the year I can't wait to get rid of it.  I don't know.  I think we will be keeping it up at least one more day.  School vacation doesn't end until tomorrow so I guess we are still celebrating the holiday.  I am still in the mood to make yummy Christmas treats too which is not helping the get healthy resolution at all.  These little bites of bliss are a prime example.  They are so good and quick to make.  I love no-bake just dip in melted chocolate recipes.  Yum. 

Fig Truffles

2 cups dried black Mission figs
1 Tbsp honey
1/2 teas ground cinnamon
2 1/2 oz dark chocolate (60% to 70 % cocoa solids), chopped

Remove the stems from  the figs and discard.  Put the figs, honey and cinnamon in a food processor and process for about 45 seconds, until the ingredients are finely chopped and begin to stick together.  Roll the fig mixture with your hands into heaping teaspoon-size balls and set them on a baking sheet or plate lined with wax paper.

Melt the chocolate in the microwave for 60 seconds then stir and reheat at 30 second intervals until melted. 

Roll the fig balls in the melted chocolate, one or two at a time, until they are all covered.  Place them back on the wax paper and then chill in the refrigerator until set, about 15 minutes.  Serve at room temperature.
