Chocolate, Macadamia, and Coconut Clusters

Happy New Year!!!!  I had a great holiday.  Had been thinking about ending this blog this year but I got two fantastic new cookbooks for Christmas.  This recipe was in Williams-Sonoma Cooking At Home.  I love this book.  There many not be any pictures but the recipes are look fantastic.  This recipe is as simple as they come but really good.  I made half a batch and they lasted less than 24 hours.  I mentioned ended my blog but instead I had started a new one.  LOL.  I am attempting to complete a 365 day picture project....wish me luck.  If you are interested, you can find the new blog at http://junkbythebunch.blogspot.com/.  Anyone want to take a bet on the chances of me actually finishing the challenge? 

Chocolate, Macadamia, and Coconut Clusters
Williams-Sonoma Cooking At Home

13 oz semisweet chocolate, chopped (I used Enjoy Life chips)
2 cups coarsely chopped lightly salted roasted macadamia nuts
1 1/2 cups sweetened shredded coconut, lightly toasted

Line baking sheet with parchment paper.

Melt chocolate in the microwave oven.  Put small pieces in a microwave-safe dish.  Heat on medium for 1 minute.  Check to see if the chocolate looks shiny and softened.  If not, continue heating, checking every 30 to 40 seconds to prevent scorching.  The chocolate will not melt completely in the microwave, but will become smooth and liquid when stirred.

Stir the macadamia nuts and coconut into the chocolate, mixing thoroughly.  Using a small spoon, scoop out slightly rounded teaspoons of the mixture and drop onto the prepared sheet, spacing them evenly.  Refrigerate uncovered until set, about 2 hours.

Store in an airtight container in the refrigerator for up to 1 month or in the freezer for up to 2 months.
